The first of our young chefs for 2009 is Oliver Martin who is currently chef de partie at the Ship at Elswick.
Having been brought up in a household where fresh, home cooked diners were the norm Oliver studied for his NVQ 1 and 2 qualifications at Blackpool and the Fylde College. Here he developed his knowledge of quality food and local produce which he now keenly emphasises in his work.
Oliver offers a menu of locally sourced quality produce with his own unique twist – as inspired by his favourite celebrity chef Marco Pierre White. “Since the Ship champions local produce and fine dining they have been very supportive of me taking part in the HotShots initiative, especially as we have achieved Highest Quality Assured in the Taste Lancashire Accreditation Scheme.”

Red Beetroot Salad
Ashcroft’s red beetroot with Mrs Kirkham’s oak and apple smoked cheese on lambs leaf with a tomato vinaigrette.
Goosnargh Cornfed Duck
Confit of duck leg with sweet potato fondant, red beetroot puree with a Lancashire tea smoked plum, orange and thyme reduction.
Vanilla Custard Panna Cotta
Served with Peter Ashcroft’s braised rhubarb and a tuile biscuit
