Having met the legend that is Ken Hom today at Northcote during the Obsession 10 festival, we asked Ken your questions posed on Twitter...
What is your favourite wine?
Mr Hom said, “People often think that wine doesn’t go with Chinese food but I disagree; one because I like drinking wine and if you are having a Chinese dish of duck or pork I think a red wine really complements the dish. A red wine from France or the new world would be my choice!
We received a question about Ken’s preferred cooking utensils (knives) but we adapted the question to what he couldn’t live without and what travelled with him, his reply was his wok!
Ask Mr Hom what other sauces are good to go with duck, other than orange or plum. What would he pay HOM-age to?
We were well into the interview when this question arrived, however as someone who obviously likes duck, a sneak preview of Ken’s menu tonight reveals one of the dishes to be ‘Crackling Chinese Roast Pork with Stir-fried Chinese Greens’!
