Well it really was ladies' night last night as Chloe Coverley took part in the tourist board's Lancashire Hot Shots initiative at MJ's in Darwen where the 19-year-old took over the restaurant's kitchen for the evening and boy what a job she did! Having designed her own three course menu Chloe produced a stunning evening.
After pre-dinner drinks and canapes we started with grey mullet gently marinated in garlic and lemon with couscous and a plum tomato dressing - delicious. Following this came roasted rump of Bowland lamb with an asparagus and broad bean risotto. Question - how do you manage to get soft creamy rice with firm crunchy vegetables?
Dessert followed and was a triumph of shortbread biscuits layered with homemade strawberry and black cherry parfait. The meal was completed with coffee and home-made petitfours which included a first for me Goosnargh cakes - a sweet shortbread biscuit flavoured with caraway seeds. All for £15 per head.
Chloe is actually producing her menu again this evening (Thursday 26 June) and there are still a few places left if you want to book. Alternatively make sure you are registered to receive our food and drink updates which include further Hot Shots events.
As for Chloe, judging by last night's fayre a glittering future awaits her and we wish her every success.
